No Cook Pasta Sauce

Great for hot summer days!

6 Chopped tomatoes
1 clove of garlic (minced)
5 Tablespoons of olive oil
3 Tablespoons of Italian Seasoning
Salt (to taste)
pepper (to taste)

Mix all ingredients in a glass mixing bowl. Let stand for an hour.
Cook choice of pasta according to package instructions, drain.
Mix sauce with pasta while pasta is still hot.
Top with choice of grated cheese.

Summer Squash Bake

1-1/2 pounds of summer squash
1/4 cup of chopped onion
1/4 cup of butter
3 eggs, beaten
1 cup of milk
1/2 cup of grated Parmesan cheese

Simmer the squash and onion until soft. (approx 10 minutes) drain.
Mix butter with squash.
Add milk, Parmesan and eggs.
Pour into casserole dish. Bake at 350 degrees for 40 minutes.

Roasted Asparagus

Coat Asparagus lightly with olive oil.
Lay in single layer on cookie sheet.
Sprinkle with salt and pepper.
Roast at 450 degrees for 10-15 minutes, or until done.

Lemon Lime Chicken

1 lemon
1 lime
3 Tablespoons of olive oil
1 crushed garlic clove
1 teaspoon of salt
1/2 teaspoon of pepper
1/8 teaspoon of cayenne pepper
Favorite chicken parts

Grate zest from lemon and lime in a medium bowl. Add remaining ingredients and mix well. Marinate your favorite chicken parts in mixture for up to 12 hours in refrigerator. Bake or barbecue as desired.

Kids Frozen Fruit Treat

1-3/4 cup of strawberries
1 large can of crushed pineapples
5 bananas cubed
12 ounce frozen orange juice concentrate
1-1/2 cups of water

Mix ingredients together. freeze in small paper cups. Serve partially defrosted.
Kids love these!!!

Snow Cone Syrup

2 cups of sugar
3/4 cup of water
1 package of unsweetened Kool-Aid (any flavor)

Bring water and sugar to boil in saucepan
Remove from heat, add Kool-Aid
Let cool completely, pour over ice and serve.

Kool-Aid Sherbet

1 cup of sugar
1 envelope of unsweetened Kool-Aid (any flavor)
3 cups of milk

Blend all ingredients well, freeze for 1 hour.
Remove from freezer, blend again till smooth, refreeze.

Ramen Noodle Taco Salad

2 packages of beef flavored Ramen Noodles
1 pound of ground beef
1 large tomato chopped
1 cup of chopped onion
2 cups of shredded cheddar cheese
Thousand Island dressing to taste

Cook noodles according to package instructions, drain.
Brown beef, drain.
Stir in 1 seasoning packet
Add remaining ingredients, mix well.

Ramen Noodle Antipasto

2 packages beef flavored Ramen Noodles
1/2 cup of sliced pepperoni
1/2 cup of sliced black olives
1/4 cup of chopped onion
Italian dressing

Cook noodles following package instructions, drain.
Add pepperoni, olives, onions and drizzle dressing.
Toss and serve
